The event, held from Feb 21st and runs for three days at the World Trade Centre will host Mars global speakers to share their expertise on international food safety standards with thousands of delegates from across the world.
Dr Brett Jeffery, Mars Global Chemical Food Safety Manager will be attending DIFSC for the second time and this year will speak about Allergen thresholds: risk based approach allergen management, a topic of high interest to the private and public sector in the food industry.
His presentation will tackle consumer’s purchasing habits to avoid allergen issues such as refraining from buying certain products unnecessarily or ignoring the labeling. Dr. Jeffery will also shed light on the scientific developments on allergen threshold derivation and provide a comparison of current allergen management with a risk based approach.
Speaking also from Mars will be Tim Ahn, Global Quality & Food Safety Director for Mars who will give a brief overview on third party audits and regulatory inspections from a food manufacturer’s perspective. It will also highlight how third party auditing can be used to demonstrate food safety governance and drive continuous improvement.
